Rikumo Kitchen: Kaz's Cucumber Salad

Kaz Morihata shares his simple cucumber salad recipe. Perfect for summer. Serves 4-6.

Ingredients:

2 carrots

2 cucumbers

2-3 tsp soy sauce (add per your taste)

1 tsp balsamic vinegar

2 tsp olive oil

2 tsp sugar

2 tsp rice vinegar

1) In a small bowl, mix rice vinegar, balsamic vinegar, olive oil, soy sauce and sugar together until sugar is dissolved.

2) In a large bowl, shred cucumbers and carrots. Drizzle with oil mixture and serve chilled.
