Cream of the Crop: The Matcha Panna Cotta Recipe
To celebrate the launch of our Morihata Organic Matcha Collection, we are highlighting a different application for each of our three unique ceremonial grades. In this special one-month series, we share some musings on matcha, and ideas for new ways to enjoy your favorite ceremonial powders.
No matter where you’re from, a well-made portion of panna cotta has the amazing ability to transport you right back to your childhood home. Like creme brulee or flan, panna cotta is an Italian sweet custard that is made by infusing sugar, milk, and cream with your choice of flavors. Traditionally prepared in individual portions, it’s the perfect dessert for serving at a gathering or dinner.
Beyond its delicate shape and sweet cream flavor, panna cotta has the advantage of looking very impressive without requiring a complicated list of ingredients or a massive amount of time. A few cups of milk, cream, and sugar are all you need to make this delicious dessert, which lends itself to hundreds of flavor variations. Our current favorite is a matcha panna cotta made with our very own Sei matcha. The final member of our Morihata Matcha Collection, Sei is a ceremonial-grade matcha that is suitable for cooking matcha-flavored dishes where you really want the vibrant and robust flavor of matcha to shine through. When used in cakes or desserts, Sei yields the same delicious taste as a cup of matcha without sacrificing on quality.
Though the setting is time-consuming, the preparation of panna cotta takes approximately twenty minutes. We suggest preparing this dessert the night before serving so it has enough time to set into a solid consistency.
Ingredients
1 cup milk
1 packet unflavored gelatin
2 cups whipping cream
¼ cup sugar
1 tablespoon Morihata Sei Matcha
Instructions
Pour the milk into a mixing bowl. Mix gelatin with the milk, letting it sit for five minutes.
In a large saucepan over medium-high heat, add the gelatin and milk mixture and heat until the gelatin has melted but not boiled.
In a small bowl, add one tablespoon of whipping cream and matcha powder, whisking until it forms a smooth, clump-free paste. Add the matcha paste to the saucepan with the rest of the whipping cream and sugar.
Stir for approximately five minutes, until the sugar dissolves and the mixture is smooth. Do not to let the mixture boil.
Pour mixture into individual ceramic cups and cool in the refrigerator for at least six hours.
