Simmered Tofu Hot Pot 

Ingredients:

3¼ cups (800 ml) water 

2 (4-inch/10 cm) square pieces kombu 

2 tablespoons sake 

1 teaspoon sea salt 

5 ounces (150 g) enoki mushrooms, trimmed 

1 (19-ounce/560 g) package soft tofu, cut into 6 pieces 

¼ cup (60 ml) Ponzu Sauce or Umami-Rich Soy Sauce, for serving

Ground toasted white sesame seeds, for serving 

Shichimi togarashi (Japanese seven-spice blend), for serving

Instructions:

Combine the water and kombu in the donabe and let the kombu soak for 30 minutes. Set over medium heat, uncovered. 

Just before the broth comes to a simmer, remove the kombu and discard or save for another use. 

Add the sake and salt. Pull apart the enoki mushrooms and add to the broth. 

Add the tofu and cover. Bring to a gentle simmer, and then turn off the heat.

Let it rest for 5 minutes. Serve in individual bowls at the table with the condiments on the side.
